Harvesting Nature's Goldin Produce
From Goldin artisan chocolates, honey and hazelnuts to organically grown garden produce and sunshine filled preserves.
Enjoy a taste of local Goldin produce from Toowarra Farm at Ilford in the Central West of NSW.
The land is the traditional land of the Wiradjuri people, and we see ourselves as the caretakers of this beautiful land.
'Slow Food'
Goldin Produce and Your Table
Our 'slow food' farming style works towards caring for the earth, caring for people and sharing the excess for your table.
Our 'slow food' philosophy at Toowarra Farm means we wait until our fresh seasonal fruit is available to make preserves for your table. We do not use, as a substitute, year-round globally available fruit that might also contain, preservatives or chemicals.
We wait until our beautiful bees have enough honey for themselves first and only then take the excess for our Goldin honey.
We wait until the 'starter' is ready to make the wood fired sourdough bread, instead of using bought yeast, and we wait until the slow-combustion wood stove is hot enough to bake the sourdough rather than using an electric oven.
We wait until the days are cooler to make the Goldin chocolates, rather than clicking on a switch to power a mechanical air conditioner.
By waiting
we value food more highly
we are connected directly to nature
our lives are enriched
'Fast food' means availability all day every day
'Slow Food' means availability when nature is ready and we may have to wait for Goldin produce
Make contact and we can tell you what is available now and when other produce will be available
Goldin Farm House
Organic Rye Sourdough
Our wood fire baked rye sourdough is baked in our kitchen slow combustion stove. The delicious bread has no preservatives added and is made with rye grain milled in our stone flour mill, and 'starter' is used to replace yeast.
Please contact us three (3) days before you would like the bread via the email address at the end of this web site.
We will email you when the bread is ready for you to pick it up at our roadside stall at our Toowarra Farm gate stall in Ilford.
Artisan Chocolates
Handcrafted in our farm house chocolaterie using Australian grown cocoa bean chocolate, our chocolates are a limited edition simply delicious decadent delight. We try to incorporate seasonal Toowarra Farm produce, such as hazelnuts and do not use any preservatives. The elegant chocolate box provides a beautiful present enclosed in a velvet drawstring bag.
Warre Honey
Indulge in our goldin honey from our small apiary of Warre hives. Our beautiful bees are an internal part of the farm garden, and are managed specifically to reduce the colony stress. Warre hives produce less than 70% than other hives, so harvesting the precious honey is seen as releasing goldin droplets. The honey box is stunning and can serve as a corporate recognition award or special anniversary or event gift. The gift box has a magnetic closure lid and includes a beautiful folded brochure about goldin honey at Toowarra Farm.
Organically Grown Hazelnuts
Freshly harvested from our farm grove, our hazelnuts are grown following organic principles.
The hazelnuts are dependent on the weather just like the fruit for the preserves. If it does not rain in November or December sometimes the shells contain no nuts at all. We use the nuts in our chocolates and when there is an excess can produce bag fulls for sale.
Sunshine Filled Preserves
Our prize winning preserves are like summer in a jar. Capturing the ephemeral sweetness of the season, and made in small batches.
The fruit we harvest is dependent on the weather - how hot or cold the temperature is, if there is a drought or if it is rainy and wet, cloudy or sunny. Sometimes it does not rain when the fruit trees need it most. When there is fruit, most ripens by the end of March, The Feijoas provide their bounty only in May.
